Upon relocating from Mexico to the US in 2016, I found myself missing the flavors of my home country, particularly the distinct taste of Mexican coffee. Unfortunately, my search in the market only led me to blends from Mexico or standard Chiapas quality.

In 2022, during our family journey to Spain, we stumbled upon a small coffee shop in Sevilla, owned by a Colombian lady who operated a modest roastery. Intrigued by her expertise, I struck up a conversation, asking about her preferred coffee. To my surprise, she expressed a profound fondness for Mexican coffee, praising its unique body and flavor profile. This encounter served as a catalyst, igniting my determination to share the world's finest specialty coffees from Mexico. It inspired me to showcase the distinctive characteristics between coffees from the Gulf of Mexico and those from the Pacific, highlighting the individuality of each Mexican state's coffee.
